Deliciously healthy Pumpkin Protein Muffins packed with the natural sweetness of pumpkin and a blend of spices, perfect for breakfast or a post-workout snack.

- 1 cup pumpkin puree
- 1/2 cup protein powder
- 1/2 cup oats
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the pumpkin puree, honey (or maple syrup), applesauce, and eggs until well combined in a large bowl.
- Whisk together the protein powder, oats, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Store the muffins at room temperature for up to 3 days or in the refrigerator for about a week. They can also be frozen for up to three months.
