- 2 cups raw pumpkin seeds (cleaned and dried)
- 2 tablespoons melted butter or coconut oil
- 3 tablespoons granulated white sugar or brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- Place the cleaned and dried pumpkin seeds in a medium-sized mixing bowl.
- Pour the melted butter (or coconut oil) and vanilla extract over the seeds. Toss them thoroughly until every seed is lightly coated.
- In a small bowl, whisk together the sugar, cinnamon, and salt.
- Sprinkle the cinnamon-sugar mixture over the buttered seeds. Stir well to ensure an even coating on all seeds.
- Spread the seeds in a single layer on the prepared baking sheet. Do not crowd them, as they need air to circulate to get crunchy.
- Bake for 35 to 45 minutes. Every 10 to 15 minutes, open the oven and stir the seeds with a spatula to ensure even browning.
- Remove the tray from the oven when the seeds are golden brown and feel crisp.
- Let the seeds cool completely on the tray. They will become even crispier as they cool down.
