- 4 tilapia fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 red bell pepper, roasted and chopped
- 1 yellow bell pepper, roasted and chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh lemon juice
- 1 teaspoon fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the bell peppers by slicing them in half, removing the seeds, and placing them skin-side up on a baking sheet. Roast for about 20 minutes or until charred. Let cool, peel, and chop.
- Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Stir in chopped roasted peppers, sauté for another 2-3 minutes. Add lemon juice, salt, and pepper, then reduce heat to keep warm.
- Season tilapia fillets with salt and pepper. Cook in a separate pan with olive oil over medium-high heat for about 3-4 minutes on each side or until golden and cooked through.
- Plate the tilapia and spoon the roasted pepper sauce over the top. Garnish with parsley if desired.
Notes
Serve over rice or quinoa for a complete meal. Leftovers can be stored in an airtight container for up to 2 days.
