- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1.5 pounds baby potatoes (red or gold), halved or quartered
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth (low sodium preferred)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Place the cubed beef and chopped potatoes into the bottom of a 6-quart slow cooker. Add the chopped onions and minced garlic on top.
- In a small bowl, whisk together the beef broth, Worcestershire sauce, dried thyme, dried rosemary, salt, and black pepper.
- Pour the liquid mixture over the beef and potatoes in the slow cooker. Stir gently to ensure everything is lightly coated with the seasonings.
- Cover the slow cooker with its lid. Cook on the “Low” setting for 7 to 8 hours, or on the “High” setting for 4 hours. The beef should be very tender when pierced with a fork.
- If you prefer a thicker gravy, whisk the cornstarch and cold water together in a small cup until smooth. Pour this slurry into the slow cooker and stir gently.
- Cover and cook on “High” for an additional 15 to 20 minutes until the sauce has thickened slightly.
- Turn off the slow cooker. Taste and add more salt or pepper if needed. Garnish with fresh parsley before serving warm.
