- 1/4 cup warm water (to adjust sauce thickness)
- Chopped peanuts (for garnish)
- Fresh cilantro or green onions (for garnish)
Instructions
- Wash the cucumbers thoroughly. Cut them into thin slices or sticks, depending on your preference.
- Combine the creamy peanut butter, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, chili garlic sauce, and warm water in a bowl. Mix well until you achieve a smooth and creamy sauce. Adjust the consistency by adding more water if needed.
- Toss the cucumber slices or sticks with the spicy peanut sauce until they are well coated.
- Transfer the cucumbers to a serving plate. Sprinkle chopped peanuts and fresh cilantro or green onions on top for added flavor and crunch.
- Serve immediately, or let it chill in the fridge for about 30 minutes to let the flavors meld together.
