- 1 pound ground turkey
- 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 medium onion, diced
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach or chopped kale
- 2 tablespoons olive oil
- 1/2 cup beef broth (halal-certified) or water
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey and cook until browned, breaking it into small crumbles with a wooden spoon. Drain any excess fat and set the turkey aside on a plate.
- In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced sweet potatoes and onions. Sauté for about 5 to 7 minutes, stirring occasionally, until the onions are translucent.
- Add the bell peppers and minced garlic to the skillet. Cook for another 2 minutes until the garlic is fragrant.
- Pour in the beef broth (or water) and sprinkle in the smoked paprika, cumin, salt, and pepper. Stir well to combine.
- Cover the skillet with a lid and reduce the heat to medium-low. Let it simmer for 8 to 10 minutes, or until the sweet potatoes are fork-tender.
- Remove the lid and stir the cooked ground turkey back into the skillet.
- Add the fresh spinach or kale on top. Stir gently for 1 to 2 minutes until the greens have wilted and everything is heated through.
- Taste and add more salt or pepper if needed. Garnish with fresh parsley and serve warm.
