Ingredients
  

Whipped Feta
  • 1 cup feta cheese Use crumbled feta for easier blending.
  • 1/3 cup Greek yogurt Full-fat yogurt works best for creaminess.
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice Freshly squeezed lemon juice is recommended.
  • 1 clove garlic, minced
Spiced Nuts
  • 1 cup mixed nuts (almonds, cashews) Feel free to substitute with your favorite nuts.
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon smoked paprika
  • 1 pinch salt
For the Platter
  • 1 cup sliced cucumbers
  • 1 cup cherry tomatoes
  • 1 cup roasted butternut squash cubes Pre-roasted or cooked butternut squash.
  • 1 package pita bread or pita chips
  • 1 cup green olives
  • 1 cup red grapes
  • 1 sprig fresh rosemary (optional) For garnishing.

Method
 

Preparation of Whipped Feta
  1. In a food processor, blend feta cheese, Greek yogurt, olive oil, lemon juice, and minced garlic until completely smooth and creamy. Chill until ready to use.
Preparation of Spiced Nuts
  1. In a skillet over medium heat, warm the honey, cinnamon, smoked paprika, and pinch of salt.
  2. Once bubbling, add the mixed nuts and stir to coat evenly. Cook for 3–4 minutes until the nuts are glossy, then spread them on parchment paper to cool.
Assembling the Platter
  1. Place a bowl of whipped feta in the center of a large serving board.
  2. Arrange the sliced cucumbers, cherry tomatoes, roasted butternut squash, green olives, red grapes, and pita bread or chips around the feta.
  3. Once cooled, add the spiced nuts on top of or beside the whipped feta.
  4. Garnish with fresh rosemary, if desired, and serve immediately to enjoy the flavors at their peak.

Notes

Store the whipped feta in an airtight container in the refrigerator for up to three days. The spiced nuts can be kept in a sealed jar at room temperature for up to a week. For best texture, serve freshly assembled platter.
