  • 16 ounces white melting chocolate
  • ¾ cup creamy peanut butter
  • 2 cups Rice Krispies cereal
  • 2 cups miniature marshmallows Chop any large marshmallows for better mixing.
  • 1 cup mini chocolate chips Divided; ¾ cup for mixing and ¼ cup for topping.

Preparation
  1. Prepare a large cookie sheet by covering it with parchment paper; set aside.
  2. Melt the white chocolate according to the package instructions.
  3. In a large bowl, combine the melted white chocolate and creamy peanut butter.
  4. Stir in the Rice Krispies, mini marshmallows, and ¾ cup of the chocolate chips.
  5. Scoop the cookies out onto the prepared cookie sheet, then top with the remaining chocolate chips.
  6. Chill the cookies in the refrigerator until set, about 20 minutes.

Notes

Store the cookies in an airtight container at room temperature for up to a week or refrigerate for longer freshness. You can freeze them in an airtight container for up to three months. Adjust the amount of peanut butter for a stronger flavor. Experiment with different types of chocolate for customization.
