  • 2 cups Cherry tomatoes, halved Can substitute with other fresh tomatoes.
  • 2 cups Fresh spinach Other greens like kale or arugula can be used.
Seasoning and Drizzle
  • 2 tablespoons Olive oil Drizzle over the dish before baking.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, place the block of feta cheese in the center. Surround it with halved cherry tomatoes and fresh spinach.
  3. Drizzle olive oil over the ingredients and season with salt and pepper.
  4. Crack the eggs directly over the feta and vegetables.
Baking
  1. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set to your liking.
  2. Remove from the oven and sprinkle with fresh herbs if desired.

Notes
