  • 1 tablespoon Salt Use sea salt if possible.
  • Water as needed Water Enough to cover the lobsters in a large pot.

Method
 

Preparation
  1. Fill a large pot with water, enough to cover the lobsters. Add salt (about 1 tablespoon per quart of water) and bring to a rolling boil.
  2. Carefully add the live lobsters to the boiling water headfirst. Cover the pot.
Cooking
  1. Start timing when the water returns to a boil. Boil for 12-15 minutes, depending on the size of the lobsters.
  2. Remove the lobsters with tongs and transfer them to a bowl of ice water to stop the cooking process.
Serving
  1. Serve with melted butter and wedges of fresh lemon.
