Preparation
  1. Wash and chop the bok choy into bite-sized pieces.
Cooking
  1. In a skillet, heat olive oil over medium heat.
  2. Add minced garlic and ginger; sauté for about 1 minute until fragrant.
  3. Add bok choy to the skillet and stir-fry for 3-4 minutes until wilted.
  4. Drizzle in soy sauce and season with salt and pepper.
  5. Cook for an additional 1-2 minutes, stirring frequently.
  6. Serve immediately as a side dish.

Notes

If you have leftovers, let the dish cool completely, then place it in an airtight container. You can store it in the fridge for up to three days.
