  • 8 oz pasta (penne or fusilli)
  • 1 lb smoked sausage (sliced) You can also use turkey sausage for a healthier option.
  • 1 medium onion (chopped)
  • 1 medium bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 2 cups heavy cream Can substitute with half-and-half or Greek yogurt for a lighter version.
  • 1 cup shredded cheddar cheese Feel free to experiment with different types of cheese.
  • 2 tbsp Cajun seasoning Adjust spiciness according to taste.
  • to taste salt and pepper
  • 2 tbsp olive oil
  • as needed fresh parsley (for garnish)

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned.
  2. Add the onion, bell pepper, and garlic; sauté until the vegetables are tender.
  3. Stir in Cajun seasoning and cook for another minute.
  4. Add the pasta and enough water to cover; bring to a boil.
  5. Reduce heat and simmer until the pasta is al dente.
  6. Stir in the heavy cream and cheese, cooking until melted and creamy.
  7. Season with salt and pepper.
  8. Garnish with parsley before serving.

Notes

Leftovers can be stored in the refrigerator for up to 3 days. To reheat, use low heat on the stovetop, adding a splash of milk or water to loosen the sauce.
