Preparation
- Peel and dice the potatoes.
- Heat oil or butter in a large skillet over medium heat.
Cooking
- Add the diced potatoes and cook until golden and crispy, about 10-15 minutes.
- In a bowl, beat the eggs and season with salt and pepper.
- Push the potatoes to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
- Mix the potatoes and eggs together, then add the cheddar cheese and optional ham or bacon. Cook until the cheese is melted.
- Serve hot.
Notes
