  • 2 medium Potatoes Peel and dice
  • 4 large Eggs Beaten
  • 1 cup Cheddar cheese Shredded
  • 1/2 cup Ham or bacon Optional, cooked and diced
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Oil or butter For cooking

Method
 

Preparation
  1. Peel and dice the potatoes.
  2. Heat oil or butter in a large skillet over medium heat.
Cooking
  1. Add the diced potatoes and cook until golden and crispy, about 10-15 minutes.
  2. In a bowl, beat the eggs and season with salt and pepper.
  3. Push the potatoes to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
  4. Mix the potatoes and eggs together, then add the cheddar cheese and optional ham or bacon. Cook until the cheese is melted.
  5. Serve hot.

Notes

For extra flavor, add some chopped herbs like chives or parsley on top. You can use different types of cheese or add extra veggies like bell peppers or onions for a unique flavor.
