Preparation
- Cut chicken into bite-sized chunks and season them with salt, pepper, and Italian seasoning.
- Place the seasoned chicken in the crockpot. Add minced garlic and chopped sun-dried tomatoes, then pour in the chicken broth.
Cooking
- Cover and cook on low for 4-5 hours or high for 2.5-3 hours, until the chicken is cooked through.
- About 30 minutes before serving, add the orzo and cubed cream cheese. Stir well to combine.
- Cook until the orzo is tender and the cheese is melted, which will take about 25-30 minutes.
- Stir in fresh spinach and Parmesan cheese until the spinach wilts and the cheese melts.
- Taste and adjust seasoning as needed. Serve hot straight from the crockpot.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days or freeze for longer storage. Consider marinating chicken in Italian dressing for added flavor. Substitute cream cheese for Greek yogurt for a lighter version.
