  • 1.5 pounds chicken breasts Cut into bite-sized chunks
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Cut chicken into bite-sized chunks and season them with salt, pepper, and Italian seasoning.
  2. Place the seasoned chicken in the crockpot. Add minced garlic and chopped sun-dried tomatoes, then pour in the chicken broth.
Cooking
  1. Cover and cook on low for 4-5 hours or high for 2.5-3 hours, until the chicken is cooked through.
  2. About 30 minutes before serving, add the orzo and cubed cream cheese. Stir well to combine.
  3. Cook until the orzo is tender and the cheese is melted, which will take about 25-30 minutes.
  4. Stir in fresh spinach and Parmesan cheese until the spinach wilts and the cheese melts.
  5. Taste and adjust seasoning as needed. Serve hot straight from the crockpot.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days or freeze for longer storage. Consider marinating chicken in Italian dressing for added flavor. Substitute cream cheese for Greek yogurt for a lighter version.
