For the cookie batter
  • 1 cup unsalted butter, softened Make sure your butter is softened at room temperature for the best texture.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup toffee bits
  • 1 cup sweetened shredded coconut, toasted Toast the shredded coconut in a dry skillet for a few minutes to enhance its flavor.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips, toffee bits, and toasted coconut.
  7. Spread the batter evenly into the prepared baking pan.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  3. Cut into bars and serve.

Notes

Serve these cookie bars warm or at room temperature. They are perfect to enjoy on their own, or pair them with a scoop of vanilla ice cream for an extra special dessert. Add a drizzle of chocolate sauce on top for an added touch. Don't overmix the batter after adding the dry ingredients to ensure the bars remain soft and chewy. Be careful not to bake them for too long; check them a couple of minutes before the timer goes off.
