  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for searing

  • 1 teaspoon garlic powder for seasoning
Stuffing Ingredients
  • 1 cup fresh spinach, chopped
  • 1/3 cup dried cranberries
  • 4 ounces brie cheese, sliced (rind removed if desired)
  • 1/2 teaspoon dried thyme
  • 1 tablespoon honey optional, for drizzle

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Carefully cut a pocket into the side of each chicken breast and season the inside and out with salt, black pepper, and garlic powder.
Stuffing
  1. In a small bowl, mix the chopped spinach and dried cranberries together.
  2. Stuff each chicken breast with the spinach mixture and slices of brie cheese, securing with toothpicks if needed.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium heat and sear the stuffed chicken for 2–3 minutes per side until lightly golden.
  2. Sprinkle dried thyme over the chicken. Transfer the skillet to the oven or move chicken to the prepared baking dish.
  3. Bake for 18–22 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  4. Optional: Just before serving, drizzle lightly with honey for a sweet contrast that enhances the dish.

Notes

Ensure your chicken breasts are of even thickness for consistent cooking. Feel free to experiment with different cheeses, such as goat cheese or mozzarella, for unique flavor profiles. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
