Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Carefully cut a pocket into the side of each chicken breast and season the inside and out with salt, black pepper, and garlic powder.
Stuffing
- In a small bowl, mix the chopped spinach and dried cranberries together.
- Stuff each chicken breast with the spinach mixture and slices of brie cheese, securing with toothpicks if needed.
Cooking
- Heat olive oil in an oven-safe skillet over medium heat and sear the stuffed chicken for 2–3 minutes per side until lightly golden.
- Sprinkle dried thyme over the chicken. Transfer the skillet to the oven or move chicken to the prepared baking dish.
- Bake for 18–22 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Optional: Just before serving, drizzle lightly with honey for a sweet contrast that enhances the dish.
