Preparation
- In a large bowl, whisk the eggs until they are light and frothy, which should take about two minutes.
- Gradually add the granulated sugar to the eggs, whisking until the mixture is pale and creamy.
- Gently fold in the melted butter and vanilla extract to the egg mixture.
Mixing Dry Ingredients
- In a separate bowl, combine the flour, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture, stirring until just combined.
- Allow the batter to rest for about 30 minutes so the flavors can meld together.
Cooking
- Preheat your pizzelle iron according to the manufacturer’s instructions.
- Lightly grease the iron plates with cooking spray or melted butter.
- Spoon about a tablespoon of batter onto each section of the iron.
- Close the lid and cook for 30 seconds to 1 minute or until golden brown.
- Carefully remove the pizzelle and place them on a wire rack to cool.
- You can shape warm pizzelle into cones or bowls, holding them until they set.
Notes
To keep your pizzelle fresh, store them in an airtight container at room temperature. They typically stay crisp for a week when stored correctly. If you want to keep them longer, freeze them by placing layers of pizzelle separated by parchment paper in a freezer bag.
