- In a large bowl, toss the butternut squash cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the seasoned squash on a baking sheet in a single layer.
Cooking
- Bake for 20-25 minutes, flipping halfway through, until the squash is golden brown and crispy.
- While the squash is baking, prepare the hot honey feta drizzle: In a small bowl, combine the crumbled feta, honey, red pepper flakes, and lemon juice. Mix until well combined.
- Once the squash bites are done, remove them from the oven and let them cool for a few minutes.
- Drizzle the hot honey feta sauce over the crispy butternut squash bites.
- Garnish with fresh parsley and serve warm.
Notes
Cut the butternut squash into uniform pieces for even cooking. Don't overcrowd the baking sheet for optimal crispiness. Adjust red pepper flakes in the drizzle to suit your taste. You can replace feta with goat cheese or add a dash of cinnamon for a different flavor.
