Ingredients
  

For the Cookie Dough
  • 70 g Brown Sugar
  • 70 g Sugar
  • 115 g Butter (melted)
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 220 g Plain Flour
  • 1 tbsp Cornflour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
For the Cream Cheese Frosting
  • 90 g Butter (softened)
  • 90 g Cream Cheese
  • 250 g Icing Sugar

Method
 

Make the Cookie Dough
  1. In a mixing bowl, combine the melted butter, brown sugar, and white sugar. Mix well until smooth.
  2. Add the egg and vanilla extract, mixing until just combined.
Add Dry Ingredients
  1. In another bowl, whisk together the plain flour, cornflour, baking soda, baking powder, and salt.
  2. Gradually add the dry mixture to the wet mixture, stirring until everything is well combined.
Chill the Dough (Optional)
  1. For best results, chill the dough in the fridge for at least 30 minutes.
Bake the Cookies
  1. Preheat your oven to 180°C (350°F).
  2. Scoop out dough and form balls. Place them on a baking sheet lined with parchment paper.
  3. Bake for 10-12 minutes or until the edges are golden brown. Remove them from the oven and let them cool.
Make the Cream Cheese Frosting
  1. In a separate bowl, beat the softened butter and cream cheese until smooth.
  2. Gradually add the icing sugar and mix until creamy.
Frost the Cookies
  1. Once the cookies are cooled, spread the cream cheese frosting on top of each cookie.

Notes

Serve at room temperature or slightly warmed. Add sprinkles or chocolate chips on top of the frosting for extra flair. Make sure your butter is at room temperature for easy mixing. Chill the cookie dough to prevent spreading while baking. Don’t overmix the dough; mix just until the ingredients are combined. You can modify the recipe by adding chocolate chips, nuts, or dried fruits.
