Preparation
- Preheat your oven to 350°F (175°C). Spray your muffin tin generously with non-stick spray or line it with silicone liners for easy removal later.
- In a blender or food processor, combine the egg whites, whole eggs, and cottage cheese. Blend for 30-45 seconds until silky smooth.
- Pour the blended mixture into a bowl. Stir in the shredded cheddar cheese, chopped spinach, onion powder, garlic powder, salt, and pepper until everything is well combined.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
Cooking
- Bake for 20-25 minutes, until the tops are slightly golden and a toothpick inserted in the center comes out clean.
- Cool for 5 minutes in the pan, then carefully remove the bites with a butter knife or small spatula.
Serving
- Serve them warm or cool completely before storing. Reheat in a toaster oven or microwave as desired.
