  • Black pepper, to taste

Preparation
  1. Preheat your oven to 350°F (175°C). Spray your muffin tin generously with non-stick spray or line it with silicone liners for easy removal later.
  2. In a blender or food processor, combine the egg whites, whole eggs, and cottage cheese. Blend for 30-45 seconds until silky smooth.
  3. Pour the blended mixture into a bowl. Stir in the shredded cheddar cheese, chopped spinach, onion powder, garlic powder, salt, and pepper until everything is well combined.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
Cooking
  1. Bake for 20-25 minutes, until the tops are slightly golden and a toothpick inserted in the center comes out clean.
  2. Cool for 5 minutes in the pan, then carefully remove the bites with a butter knife or small spatula.
Serving
  1. Serve them warm or cool completely before storing. Reheat in a toaster oven or microwave as desired.
