  • 1 pound baby potatoes Wash and scrub before use.
  • 3 tablespoons olive oil For coating the potatoes.
  • 4 cloves garlic, minced Adjust amount based on preference.
  • 1/2 cup sour cream Can be substituted with Greek yogurt for a lighter version.
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • to garnish Fresh parsley, chopped For a pop of color and flavor.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the baby potatoes, then cut them in half.
  3. In a large mixing bowl, combine the olive oil, minced garlic, salt, and pepper.
  4. Add the halved baby potatoes to the bowl and toss until well coated.
Cooking
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, or until golden and tender.
Sauce Preparation
  1. While the potatoes are roasting, mix together the sour cream, lemon juice, oregano, salt, and pepper in a separate bowl.
  2. Once the potatoes are done, remove them from the oven and drizzle the garlic sauce over them.
  3. Garnish with fresh parsley and serve warm.

Notes

Make sure to wash the baby potatoes thoroughly before cooking. Don't skip the fresh parsley garnish for added flavor and color. Feel free to adjust the garlic to your taste; add more if you love garlic!
