Ingredients
  

For the Chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Toppings
  • 1 cup Cucumber, diced
  • 1 cup Tomatoes, diced
  • 1 small Red onion, diced
  • 1 cup Feta cheese, crumbled
  • 4 pieces Pita bread or rice
  • 1/4 cup Fresh herbs (such as parsley or dill)
  • 1 cup Tzatziki sauce

Method
 

Marinate the Chicken
  1. Marinate the chicken breasts in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
Cook the Chicken
  1. Cook the chicken on a grill or in a skillet over medium heat until fully cooked, about 7-8 minutes per side.
Prepare the Tzatziki Sauce
  1. While the chicken is cooking, prepare the tzatziki sauce by mixing diced cucumber, yogurt, garlic, dill, lemon juice, and salt in a bowl.
Assemble the Bowls
  1. Once the chicken is cooked, let it rest for a few minutes before slicing it.
  2. In serving bowls, layer rice or pita bread, fresh vegetables, sliced chicken, and top with feta cheese and tzatziki sauce.

Notes
