Ingredients
  

For the Chicken Marinade
  • 3 tablespoons olive oil
  • 1 none Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • to taste none Salt and black pepper
  • 500 g boneless, skinless chicken breast, sliced or cubed
For the Mezze Board
  • 1 cup Kalamata olives
  • ½ cup green olives
  • 100 g feta cheese, cubed
  • ½ cup cherry tomatoes
  • ½ cup cucumber slices
  • ¼ cup roasted red peppers
  • to garnish none Fresh parsley or oregano
  • to serve none Pita bread or flatbread, warmed

Method
 

Marination
  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
  2. Add the sliced or cubed chicken, tossing to coat it well in the marinade. Let it marinate for at least 30 minutes.
Cooking
  1. Heat a skillet or grill pan over medium-high heat.
  2. Cook the marinated chicken for about 6–8 minutes, turning occasionally, until it’s golden and fully cooked.
Assembly
  1. Arrange the cooked chicken on one side of a large board or platter.
  2. In separate sections, add the Kalamata and green olives, chilled feta, cherry tomatoes, cucumber slices, and roasted red peppers.
  3. Garnish with fresh parsley or oregano, and serve with warm pita or flatbread for dipping.

Notes

For optimal flavor, consider marinating chicken overnight. Leftovers should be stored separately in airtight containers.
