Marination
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
- Add the sliced or cubed chicken, tossing to coat it well in the marinade. Let it marinate for at least 30 minutes.
Cooking
- Heat a skillet or grill pan over medium-high heat.
- Cook the marinated chicken for about 6–8 minutes, turning occasionally, until it’s golden and fully cooked.
Assembly
- Arrange the cooked chicken on one side of a large board or platter.
- In separate sections, add the Kalamata and green olives, chilled feta, cherry tomatoes, cucumber slices, and roasted red peppers.
- Garnish with fresh parsley or oregano, and serve with warm pita or flatbread for dipping.
Notes
For optimal flavor, consider marinating chicken overnight. Leftovers should be stored separately in airtight containers.
