Marinating the Chicken
- In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Add chicken and marinate for at least 15 minutes.
Cooking the Chicken
- Heat a skillet over medium-high heat and cook the chicken for 8–10 minutes until fully cooked and slightly charred.
Preparing the Yogurt Sauce
- In a small bowl, mix Greek yogurt, dill, lemon juice, olive oil, garlic powder, and salt until smooth.
Assembling the Bowls
- Prepare bowls with a base of rice or quinoa.
- Top with cooked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Drizzle yogurt dill sauce over the top.
- Serve immediately.
Notes
For maximum flavor, marinate the chicken for longer—up to 2 hours if time allows. If you want to get that authentic char, grilling the chicken is an excellent alternative to pan-frying. Feel free to mix up the veggies according to your taste or to what you have on hand. Roasted bell peppers or shredded carrots also work wonderfully! Substitute chicken with chickpeas or grilled vegetables for a delicious plant-based version.
