Ingredients
  

For the Souvlaki
  • 1.5 pounds boneless, skinless chicken breast, cubed
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • to taste Salt and black pepper
For the Bowl
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 0.25 cup red onion, thinly sliced
  • 0.5 cup crumbled feta cheese
  • to taste Fresh parsley, chopped (for garnish)
For the Tahini Garlic Sauce
  • 0.25 cup tahini
  • 2 tablespoons lemon juice for sauce
  • 1 clove garlic, finely minced for sauce
  • 2-4 tablespoons warm water to thin sauce
  • to taste Salt (for sauce)

Method
 

Marinate the Chicken
  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper. Add the cubed chicken and toss to coat thoroughly. Allow it to marinate for at least 20 minutes.
Cook the Chicken
  1. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 8–10 minutes, turning occasionally, until it is fully cooked through and lightly charred on the outside.
Prepare the Tahini Garlic Sauce
  1. While the chicken cooks, prepare the tahini garlic sauce by whisking together tahini, lemon juice, minced garlic, salt, and enough warm water to achieve a smooth consistency.
Assemble Your Bowls
  1. Assemble your bowls by starting with a base of cooked rice or quinoa. Top with the grilled chicken, cherry tomatoes, diced cucumber, and thinly sliced red onion.
Serve
  1. Drizzle generously with the tahini garlic sauce, then sprinkle over crumbled feta cheese and chopped parsley. Serve warm.

Notes

Leftovers can be stored in airtight containers in the fridge for up to 3 days. For optimal freshness, consider storing the tahini garlic sauce separately and adding it just before serving.
