Ingredients
  

For the Chicken Souvlaki
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • Salt and black pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes
For the Feta Dip
  • 1 cup crumbled feta cheese
  • 0.5 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 small clove garlic, minced
  • 1 tbsp chopped fresh dill
For Serving
  • Warm pita bread, cut into triangles
  • Cherry tomatoes
  • Sliced cucumbers
  • Kalamata olives
  • Roasted red peppers
  • Fresh herbs (parsley, mint, or dill) for garnish

Method
 

Preparation
  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
  2. Add the chicken cubes to the marinade and toss to coat thoroughly. Let it marinate for at least 30 minutes for maximum flavor.
Grilling Chicken
  1. Thread the marinated chicken onto the soaked wooden skewers.
  2. Preheat your grill or grill pan to medium-high heat. Once hot, grill the chicken skewers for about 8–10 minutes, turning occasionally, until they are fully cooked through and have nice char marks.
Making the Feta Dip
  1. Meanwhile, in a blender, combine the crumbled feta, Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and dill. Blend until smooth and creamy.
  2. Taste and adjust the seasoning of the feta dip if necessary, adding more salt or lemon juice as desired.
Assembly
  1. Once the chicken is done, arrange the grilled skewers on a large serving board.
  2. Add bowls of the feta dip, olives, roasted red peppers, cherry tomatoes, sliced cucumbers, and warm pita.
  3. Finish off your board with a sprinkling of fresh herbs for garnish and serve immediately.

Notes

For an inviting presentation, place the grilled chicken skewers artistically on the board. Encourage guests to build their own bites with pita and toppings for a casual yet elegant dining experience. Leftovers can be stored separately in airtight containers; the chicken stays fresh for up to three days, and the dip lasts about a week.
