Preparation
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
- Add the chicken cubes to the marinade and toss to coat thoroughly. Let it marinate for at least 30 minutes for maximum flavor.
Grilling Chicken
- Thread the marinated chicken onto the soaked wooden skewers.
- Preheat your grill or grill pan to medium-high heat. Once hot, grill the chicken skewers for about 8–10 minutes, turning occasionally, until they are fully cooked through and have nice char marks.
Making the Feta Dip
- Meanwhile, in a blender, combine the crumbled feta, Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and dill. Blend until smooth and creamy.
- Taste and adjust the seasoning of the feta dip if necessary, adding more salt or lemon juice as desired.
Assembly
- Once the chicken is done, arrange the grilled skewers on a large serving board.
- Add bowls of the feta dip, olives, roasted red peppers, cherry tomatoes, sliced cucumbers, and warm pita.
- Finish off your board with a sprinkling of fresh herbs for garnish and serve immediately.
