Ingredients
  

For the Chicken Marinade
  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
For Assembly
  • 4 large tortillas or wraps
  • 1/2 cup Greek yogurt
  • 1/2 cup roasted red peppers, pureed
  • 1 cup mixed greens
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced cucumbers
  • Feta cheese, for topping

Method
 

Marination
  1. In a bowl, combine olive oil, garlic powder, onion powder, oregano, salt, and pepper.
  2. Coat the chicken breasts with the mixture and let them marinate for at least 15 minutes.
Cooking the Chicken
  1. Preheat a grill or skillet over medium heat and cook the chicken for 6-7 minutes on each side or until fully cooked.
  2. Remove and let it rest before slicing.
Prepare the Sauce
  1. In a separate bowl, mix Greek yogurt and pureed roasted red peppers to make the sauce.
Assembly
  1. To assemble the wraps, place some sliced chicken in the center of each tortilla.
  2. Add mixed greens, diced tomatoes, cucumbers, and drizzle with the roasted red pepper sauce.
  3. Sprinkle feta cheese on top, fold the edges of the tortilla, and roll tightly.
Serving
  1. Serve immediately or wrap in foil for meal prep.

Notes

For best flavor, marinate the chicken for up to 2 hours. You can customize the wraps with additional ingredients like olives or avocado. Store leftovers in an airtight container for up to 3 days.
