Ingredients
  

Main Ingredients
  • 2 cups cooked rice or quinoa Use whichever you prefer
  • 2 boneless, skinless chicken breasts diced
  • 2 tablespoons olive oil Divided
  • 3 cloves garlic, minced
  • 2 tablespoons honey Adjust to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • to taste Salt and black pepper
Toppings
  • 1/3 cup dried cranberries
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped

Method
 

Cooking Chicken
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the diced chicken and cook until golden brown and fully cooked, about 6–8 minutes.
  3. Stir in the garlic, honey, lemon juice, oregano, paprika, salt, and black pepper.
  4. Cook for an additional 2–3 minutes until the sauce thickens and coats the chicken evenly.
  5. Remove from heat and set aside.
Assembling the Bowl
  1. In serving bowls, add a base of cooked rice or quinoa.
  2. Top with the honey garlic chicken, dried cranberries, cucumber, cherry tomatoes, and red onion.
  3. Sprinkle with crumbled feta cheese and fresh parsley.
  4. Drizzle remaining olive oil if desired and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed, keeping the sauce separate for best results.
