Cooking Chicken
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the diced chicken and cook until golden brown and fully cooked, about 6–8 minutes.
- Stir in the garlic, honey, lemon juice, oregano, paprika, salt, and black pepper.
- Cook for an additional 2–3 minutes until the sauce thickens and coats the chicken evenly.
- Remove from heat and set aside.
Assembling the Bowl
- In serving bowls, add a base of cooked rice or quinoa.
- Top with the honey garlic chicken, dried cranberries, cucumber, cherry tomatoes, and red onion.
- Sprinkle with crumbled feta cheese and fresh parsley.
- Drizzle remaining olive oil if desired and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat as needed, keeping the sauce separate for best results.
