Preparation
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown.
- Remove the chicken and set aside.
- In a bowl, mix together the BBQ sauce, honey, and minced garlic for the glaze.
- In the same pan, toast the uncooked rice for 1–2 minutes until it smells nutty.
Cooking
- Add chicken broth and half of the prepared sauce to the pan, stirring to combine.
- Return the chicken to the pan and pour the remaining sauce over it.
- Cover the pan and simmer on low heat for 15 minutes.
- After 15 minutes, add the mixed vegetables, cover, and cook for an additional 5 minutes.
- Let the dish sit for 5 minutes before garnishing with chopped green onions.
Notes
Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for 2-3 months. Reheat thoroughly before serving.
