  • 1 lb boneless, skinless chicken thighs Provides more flavor and moisture.
  • 1 cup long-grain rice Use uncooked rice.
  • 2 cups chicken broth Adjust based on rice type.
  • 1/2 cup BBQ sauce Choose your favorite BBQ sauce.
  • 1/4 cup honey Adjust for sweetness preference.
  • 1 tsp garlic powder For seasoning.
  • 1 tsp onion powder For seasoning.
  • 1/2 tsp smoked paprika For seasoning.
  • Salt and pepper to taste To season the chicken.
  • 1 cup mixed vegetables (optional) Add color and texture.
  • Chopped green onions for garnish For serving.

Method
 

Preparation
  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown.
  3. Remove the chicken and set aside.
  4. In a bowl, mix together the BBQ sauce, honey, and minced garlic for the glaze.
  5. In the same pan, toast the uncooked rice for 1–2 minutes until it smells nutty.
Cooking
  1. Add chicken broth and half of the prepared sauce to the pan, stirring to combine.
  2. Return the chicken to the pan and pour the remaining sauce over it.
  3. Cover the pan and simmer on low heat for 15 minutes.
  4. After 15 minutes, add the mixed vegetables, cover, and cook for an additional 5 minutes.
  5. Let the dish sit for 5 minutes before garnishing with chopped green onions.

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for 2-3 months. Reheat thoroughly before serving.
