  • 2 tbsp olive oil For searing chicken.
  • 2 boneless, skinless chicken breasts Seasoned to taste.
  • 1 tsp smoked paprika Adds flavor to the chicken.
  • 1 tsp garlic powder For additional flavor.
  • 1 ripe avocado, sliced For topping.
  • 1/4 cup red onion, thinly sliced Adds crunch and flavor.
  • 1/4 cup fresh cilantro, chopped For garnish.
  • Juice of 1 lime For dressing.
  • 2 tbsp honey For sweetness in dressing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt, pepper, smoked paprika, and garlic powder.
  3. Heat the olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes per side until they turn a beautiful golden brown.
Cooking
  1. Transfer the seared chicken to the oven and bake for 12–15 minutes, or until cooked through and the juices run clear.
  2. In a small bowl, whisk together the lime juice and honey to create a delicious dressing.
Assembly
  1. On serving plates, layer the cooked brown rice, sliced chicken, avocado, and red onion.
  2. Drizzle the honey-lime dressing over the top and sprinkle with fresh cilantro for flavor and color.
  3. Serve immediately while everything is fresh and warm!

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator. Consider separating components to maintain freshness. Can substitute vegetables or chicken as per preference.
