Cooking the Chicken
- Heat olive oil in a skillet over medium heat and cook diced chicken until browned and fully cooked, about 6–8 minutes.
- Season the chicken with chili powder, cumin, salt, and black pepper, stirring to coat evenly.
- In a small bowl, whisk together honey, lime juice, and lime zest, then pour over the chicken.
- Cook for 2–3 minutes until the sauce thickens and coats the chicken with a glossy glaze.
Assembling the Stack
- In another bowl, combine diced mango, black beans, red bell pepper, and chopped cilantro.
- To assemble, add a layer of rice to a plate or mold, then top with the mango mixture followed by the honey lime chicken.
- Gently press to stack or serve layered in a bowl as desired.
Notes
Serve layered or mixed with a side of fresh salad or tortilla chips. Garnish with extra cilantro or lime wedges.
