Method
Marinating the Chicken
- In a bowl, whisk together the olive oil, lime zest, lime juice, honey, minced garlic, cumin, salt, and black pepper.
- Add the chicken breasts to the mixture and coat them well. Allow the chicken to marinate for at least 20 minutes.
Cooking the Jasmine Rice
- While the chicken is marinating, cook the jasmine rice according to the package instructions using either water or chicken broth. Fluff the rice with a fork and set aside.
Grilling the Chicken
- Heat a grill pan or large skillet over medium-high heat and cook the marinated chicken for 5–6 minutes on each side until fully cooked and caramelized.
- Remove the chicken from heat and let it rest for a few minutes before slicing.
Preparing the Rice Mixture
- In a separate bowl, mix the cooked jasmine rice with diced mango, chopped cilantro, and red onion if using. Season lightly with salt.
Assembling the Dish
- Layer a scoop of mango jasmine rice on a plate, then top it with slices of honey lime chicken. Serve warm and enjoy!
Notes
For a heartier side, add black beans or corn to the rice mixture. Can be served casually or in individual portions for more elegance.
