Ingredients
  

For the Chicken
  • 1.5 lbs boneless skinless chicken breast, cut into bite-sized pieces Use fresh chicken for best results.
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 limes zest and juice of
  • 3 tbsp honey
For Serving
  • 2 cups cooked white or jasmine rice
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh cilantro (optional)

Method
 

Cooking the Chicken
  1. Heat olive oil in a large skillet over medium heat and season the chicken with salt, black pepper, paprika, and garlic powder.
  2. Add the chicken to the skillet and cook for 6–8 minutes, stirring occasionally, until golden and fully cooked.
  3. Reduce heat to low and stir in lime zest, lime juice, and honey.
  4. Simmer for 2–3 minutes until the chicken is glossy, glazed, and fragrant.
Assembly
  1. To assemble, add a layer of warm rice to a plate or bowl.
  2. Top the rice with honey lime chicken, then sprinkle with feta cheese and fresh herbs.
  3. Serve immediately while warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop.
