Cooking the Chicken
- Heat olive oil in a large skillet over medium heat and season the chicken with salt, black pepper, paprika, and garlic powder.
- Add the chicken to the skillet and cook for 6–8 minutes, stirring occasionally, until golden and fully cooked.
- Reduce heat to low and stir in lime zest, lime juice, and honey.
- Simmer for 2–3 minutes until the chicken is glossy, glazed, and fragrant.
Assembly
- To assemble, add a layer of warm rice to a plate or bowl.
- Top the rice with honey lime chicken, then sprinkle with feta cheese and fresh herbs.
- Serve immediately while warm.
