Dressing Ingredients

Preparation
  1. In a large bowl, combine shredded chicken, diced mango, salad greens, cucumber, red onion, cilantro, and cherry tomatoes.
  2. In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and black pepper.
  3. Pour the dressing over the salad.
  4. Toss gently until all ingredients are evenly coated without crushing the mango.
  5. Taste and adjust seasoning if needed.
  6. Serve immediately or chill for 10 minutes before serving for extra freshness.

Store leftovers in an airtight container in the refrigerator and consume within 2-3 days. Dress only the portion you plan to eat right away to prevent sogginess.
