  • 1 medium bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 medium red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Preparation
  1. In a large bowl, combine the chickpeas, feta cheese, cucumber, bell pepper, cherry tomatoes, red onion, and parsley. Toss gently to mix the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss to combine everything thoroughly, ensuring each ingredient is coated in the dressing.
  4. Serve immediately or refrigerate for later use. If refrigerating, mix again before serving for the best flavor.

Notes

To store the salad, keep it in an airtight container in the refrigerator for up to 2-3 days. The flavors will deepen as it sits, but for the best texture, keep the dressing separate until serving.
