- Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
- While the eggs are cooking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
- Once the eggs are done, cool them under cold water, peel, and cut in half lengthwise.
- Scoop the yolks into a bowl and mash them with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth.
- Crumble the cooked bacon and mix half into the yolk mixture.
Assembly
- Spoon or pipe the yolk mixture back into the egg whites.
- Top with the remaining bacon and garnish with chives or parsley. Serve immediately.
