  • 6 large large eggs Fresh eggs are preferred for this recipe.
  • 4 strips strips of bacon You can substitute with turkey or pancetta for variations.
  • 1/4 cup mayonnaise Use your preferred brand.
  • 1 teaspoon Dijon mustard For added flavor.
  • 1 teaspoon vinegar White vinegar works best.
  • to taste Salt and pepper Adjust according to your preference.
  • to taste Chopped chives or parsley For garnish.

Method
 

Preparation
  1. Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
  2. While the eggs are cooking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  3. Once the eggs are done, cool them under cold water, peel, and cut in half lengthwise.
  4. Scoop the yolks into a bowl and mash them with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth.
  5. Crumble the cooked bacon and mix half into the yolk mixture.
Assembly
  1. Spoon or pipe the yolk mixture back into the egg whites.
  2. Top with the remaining bacon and garnish with chives or parsley. Serve immediately.

Notes

Serve these deviled eggs on a nice platter, garnished with chives or parsley. They are great as an appetizer or snack for any gathering. For extra flavor, consider adding hot sauce or smoked paprika to the yolk mixture.
