For the cookie dough
  • 1 cup unsalted butter, softened Ensure butter is softened but not melted for the best texture.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour Can substitute with gluten-free flour for a gluten-free version.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
For the mix-ins
  • 1 cup packed mint chocolate chips For a richer taste, you can use dark chocolate chips.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, and salt in a separate bowl; gradually stir into the creamed mixture.
  5. Fold in the mint chocolate chips.
Baking
  1. Drop by rounded tablespoons onto ungreased cookie sheets.
  2. Bake for 9 to 11 minutes, or until golden brown.
  3. Let cool on the cookie sheet for a few minutes before transferring to wire racks.

Notes

Serve warm with a glass of milk or a hot cup of coffee. For longer storage, cookies can be frozen for up to three months. Don't overmix the dough to keep the cookies soft.
