Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking soda, and salt in a separate bowl; gradually stir into the creamed mixture.
- Fold in the mint chocolate chips.
Baking
- Drop by rounded tablespoons onto ungreased cookie sheets.
- Bake for 9 to 11 minutes, or until golden brown.
- Let cool on the cookie sheet for a few minutes before transferring to wire racks.
Notes
Serve warm with a glass of milk or a hot cup of coffee. For longer storage, cookies can be frozen for up to three months. Don't overmix the dough to keep the cookies soft.
