  • 1 cup peanut butter Use creamy peanut butter for a smoother texture.
  • 1 cup brown sugar
  • 1 cup white sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 3 cups old-fashioned oats Rolled oats give better texture than quick oats.
  • 1 cup chocolate chips
  • 1 cup M&Ms

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine peanut butter, brown sugar, and white sugar. Mix well.
  3. Add the eggs and vanilla extract. Stir until combined.
  4. Add baking soda and mix it in.
  5. Gradually add the oats and mix until fully incorporated.
  6. Fold in the chocolate chips and M&Ms.
  7. Scoop tablespoons of dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until the edges are golden brown.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve monster cookies warm or at room temperature. Store in an airtight container at room temperature for up to one week, or freeze for up to three months. Allow to thaw at room temperature before serving. You can customize by adding dried fruit, white chocolate chips, or coconut flakes. For a crunchier cookie, add chopped nuts to the dough. Do not overbake; cookies should be slightly soft in the center when taken out of the oven.
