  • 1 cup unsalted butter softened for easy mixing
  • 1 cup packed brown sugar
  • 2 cups Club crackers can substitute with saltines or buttery round crackers
  • 1 cup chopped pecans can use other nuts like almonds or walnuts
  • 1 teaspoon vanilla extract or other flavors like almond or maple

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Arrange the Club crackers in a single layer on the sheet.
Toffee Preparation
  1. In a medium saucepan, combine softened butter and brown sugar over medium heat.
  2. Stir until the mixture boils, then let it bubble for 3-4 minutes, stirring constantly.
  3. Remove from heat and stir in vanilla extract.
Assembly and Baking
  1. Pour the toffee over the arranged crackers, spreading it evenly.
  2. Sprinkle the chopped pecans over the toffee-coated crackers, pressing them gently.
  3. Bake in the preheated oven for 10-12 minutes until golden brown.
  4. Remove from the oven and cool for about 15 minutes.
  5. Cut into squares or rectangles with a sharp knife.
Serving
  1. Serve on a platter, optionally garnished with sea salt or a chocolate drizzle.

Store in an airtight container at room temperature for up to a week, or refrigerate for longer storage. Let come to room temperature before serving.
