  • 8 ounces cream cheese, softened Ensure fully softened for smooth mixture.
  • 1 cup powdered sugar Adjust sweetness as desired.
  • 2 cups chocolate chips (milk, dark, or white) Can mix different types for flavor.
  • 1 tablespoon unsweetened cocoa powder For dusting before chocolate sets.

Method
 

Preparation
  1. In a blender or food processor, puree the strawberries until smooth.
  2. In a mixing bowl, combine the cream cheese and powdered sugar, mixing until well blended.
  3. Add the strawberry puree to the cream cheese mixture and blend until smooth.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, scoop out small amounts of the mixture and roll into balls.
Coating
  1. Melt the chocolate chips in a microwave or double boiler until smooth.
  2. Dip each ball into the melted chocolate, then place on a parchment-lined baking sheet.
  3. If desired, dust with cocoa powder or add toppings before the chocolate sets.
  4. Refrigerate the truffles until the chocolate is firm.

Store in an airtight container in the refrigerator for about 1 week or freeze for up to 2 months.
