Ingredients
  

Carrot Preparation
  • 1 pound Carrots Peeled and cut into uniform pieces.
  • 2 tablespoons Olive oil For tossing the carrots.
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Whipped Ricotta
  • 1 cup Ricotta cheese Whipped until creamy.
  • 1 tablespoon Honey For drizzling.
  • 1/4 teaspoon Red pepper flakes Optional, for added heat.
  • 2 tablespoons Fresh herbs Optional, for garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the carrots into uniform pieces.
  3. Toss the carrots with olive oil, salt, and black pepper.
Roasting
  1. Spread the carrots on a baking sheet and roast for 25-30 minutes until tender and caramelized.
Whipping Cream
  1. While the carrots are roasting, whip the ricotta cheese until creamy.
Serving
  1. Once the carrots are done, remove them from the oven and let them cool slightly.
  2. Serve the roasted carrots topped with whipped ricotta, drizzled with honey.
  3. Sprinkle with red pepper flakes and garnish with fresh herbs if desired.

Notes

For a more substantial meal, consider serving the carrots over a bed of quinoa or greens, topped with nuts for crunch. Leftover roasted carrots can be stored for up to three days in the refrigerator.
