  • 12 ounces cheese tortellini Cook according to package instructions.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup fresh basil, chopped Use fresh for the best flavor.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar Can substitute with balsamic or apple cider vinegar.
  • to taste Salt and pepper

Method
 

Cooking the Tortellini
  1. Cook the tortellini according to package instructions; drain and let cool.
Mixing the Salad
  1. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, bell pepper, black olives, and basil.
Making the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
Combining
  1. Pour the dressing over the salad and toss to combine.
  2. Serve chilled or at room temperature.

Notes
